When discussing his vocation, Michael often says that he became a chef by accident. He has worked in the culinary field for many years, progressing quickly through the ranks, managing a staff of more than 40 by the time he was twenty-one. However, despite his skills, Michael knew that he still didn’t really know how to cook; at the same time, he suddenly realized that cooking, real cooking was what he needed to do with his life. He then entered the Red Seal professional cooking program at Camosun College, and after graduating in 2001, was now qualified to do the type of cooking he wanted to do. In the years since, Michael has worked at a number of top-class resorts both at local venues (Aerie Resort on Vancouver Island) and internationally (Hotel Schweizerhof in Bern, Switzerland). He has cooked alongside Daniel Boloud at his renowned New York restaurant, ‘Daniel’, and the award winning Chef and Restaurateur Michael Schlow of Boston’s ‘Radius’. These experiences lead to Michael’s first job as Executive Chef at the exclusive Albreda Lodge Heli-ski resort in B.C., where he catered to such exclusive clientele as surfing legend Jerry Lopez and the famous French hotelier and wine producer Michel Reybier. Having achieved success as a top-level chef, Michael then found the focus of his cooking career to be changing, as he turned his talents to teaching. He wanted to bring the gastronomic delights of a high-end resort menu to the everyday home, but with a significant difference. As Michael saw it, there was a great and unfortunate gap between the nutritional content of existing restaurant food and where he wanted it to be. So he challenged himself to bring the worlds of nutrition and taste together, in effect, creating his own unique cooking style. In all of his recipes, Michael concentrates on natural, unprocessed foods and is passionate about using local, free-range, wild and organic ingredients. Michael has now found his true calling, catering private in-home gourmet dinner parties as well as teaching everyday people how to bring more healthy yet delicious options into their own homes. Since starting his business, Michael’s recipes have been featured in ‘Buy BC Wild’ magazine and distributed in Thrifty Foods; he has also been featured as a guest chef on A-Channel’s ‘The Morning Show’ and was a semi-finalist on the hit show ‘Making it Big!’ These days you can find Michael every third Thursday of the month hosting healthy cooking lessons at the Planet Organic Market.
